1 can of sweet corn
2 tbsp mayonnaise
1 tbsp chopped cilantro
1 garlic clove finely chopped
Dash of cayenne pepper
Cotija or feta cheese to taste
Preheat your pan over high heat and get it ripping hot. Pour in a tablespoon of oil and let the oil heat up. Roll it around in the pan to make sure it coats the pan.
Open can of corn. Drain the corn and pat dry with paper towel.
Pour the corn into the pan away from you being careful not to let the oil splash up. Be sure the corn is dry before pouring it in or the oil will splash.
Immediately season with salt and pepper. Let it brown and almost char, moving every once in a while to make sure it doesn’t stick and burn.
Add the garlic and cook for about a minute, making sure the garlic does not burn.
Remove from the pan and transfer to a bowl.
Add the mayonnaise, chopped cilantro, cayenne pepper, and cheese.
Serve and enjoy.
